Is it possible to edit the underlying configuration files without breaking the GUI interface? In particular I would like to edit the DNS and DHCP server configurations. I think as these can get large it would be easier to manage by editing a text file instead of clicking in the GUI.

If it is possible to edit these files directly, where are they stored? Is there anything special that has to be done to make sure the GUI stays happy with the files?
